A more healthy and wholesome style of eating is Shima’s new focus. 10 years ago, an interest in health drove owner K. Watanabe to form a team of nutritionists and chefs to perfect a recipe for the most natural and nourishing handmade tofu in Singapore. The extensive research and development over the years has resulted in a nutritious menu, particularly popular with the Japanese and vegetarians. Using non-GM soybeans imported from Japan and special mineral water, our tofu menu consists of over 30 a la carte items and a few kaiseki menus, setting a new standard in the growing Japanese food market.
